Fresh Black Autumn Truffle (Grade A Italian - Umbria)
Black Winter Truffles (Tuber melanosporum) have been prized for centuries. With a black exterior and grey colored flesh, they have a distinctive and powerful aroma. Harvested from November to March, black truffles are typically served fresh with pasta, risotto, eggs, potatoes or meat dishes.
Store fresh truffles in the refrigerator submerged in a container of uncooked rice or wrapped loosely in paper towels. Fresh truffles are best when used within a week or less after they arrive.
